Ghostly Hot Wings

Ghostly Hot Wings

Ingredients:
  • 2 lbs chicken wings
  • 1½ cups flour
  • 2 tsp Ghost Pepper Salt, divided
  • 1 tsp Smoked Paprika
  • 2 tsp chili powder
  • 3 eggs
  • ¼ cup honey
  • ¼ cup Mango Habanero Fruit Vinegar
  • ¼ cup Chipotle Olive Oil
Directions:

Preheat oven to 400°F. Line a baking sheet with parchment paper and set a baking rack on top. Brush the rack with a bit of EVOO, then set it aside.

Set up a breading station. In one medium-sized, shallow bowl, add the flour, 1 tsp of salt, paprika, and chili powder, and whisk together. In a second medium-sized mixing bowl, whisk together the eggs, half the honey, half the balsamic, and olive oil. Beginning with the flour blend, dredge the chicken wings in the flour mixture, shaking off excess flour. Dredge in eggs, then back in flour. Set wings on a baking rack and bake for 20 minutes, flipping halfway through. Remove from oven.

Step 3 - While wings bake, place the remaining honey, vinegar, and salt in a small saucepan over medium heat. Whisk together and place over medium heat, simmer for 5 to 6 minutes to reduce a little bit and caramelize. Drizzle over the wings straight out of the oven, or toss in the sauce in a bowl to completely coat. Serve hot before wings get soggy.

These are best enjoyed as soon as they are made and don’t store well
