Ingredients:
- 2 cups all-purpose flour
- 1 tbsp sugar
- 1 tsp sea salt
- ¾ cup Lemon Olive Oil
- ¼ cup ice water
Egg Wash
- 1 tbsp milk
- 1 egg, beaten
- 1 cup strawberry or raspberry jam
Frosting
- 1 cup icing sugar
- 1 tbsp Honeybell Orange Balsamic
- 1 tbsp milk
- ¼ tsp vanilla bean paste
Directions:
Pulse together flour, sugar, and salt in a food processor. Slowly drizzle in olive oil while processor is running, then pulse in 2 to 3 tbsp water to make a soft but firm dough. If the dough is too dry to gently pinch together with your fingers, add remaining tablespoon of water.
On a lightly floured surface, tip out dough. Gather into a ball gently and divide in half. Press each half into a flat square-shaped disk about one inch thick and wrap each in plastic wrap. Store in the fridge for about 30 minutes. Remove dough from the fridge and let rest for 10 minutes before rolling.
Line a large baking sheet with parchment paper.
On a large floured surface, roll each disk out into a rectangular-shaped sheet of dough about 9 by 12 inch rectangle and ¼” thick. Cut the dough into 9 equal 3x4 rectangles and move them to the baking sheet. Repeat with remaining dough and dust with a little flour, reserving them for the tops of the pastry.
Beat together egg and milk and set aside. Add 2 tablespoons of jam to the center of each rectangle on the baking sheet, spreading in the middle of the pastry, keeping outer edges
clean. Brush exposed outer edges with the egg wash and place a reserved rectangle of pastyry overtop, pressing and sealing edges together with a fork. Poke top of pastry with a fork to allow it to vent and brush tops with remaining egg wash. Chill pastries for 30 minutes.
Preheat the oven to 375°F.
Bake pastries for 22 to 25 minutes until golden brown. Remove from oven and cool for 10 minutes before moving from the sheet tray to a baking rack to cool off.
As the pop-tarts cool, whisk together frosting ingredients until smooth and thickened.
When pop-tarts are completely cooled, spoon 1 tbsp of frosting overtop, spreading out evenly. Sprinkle with sprinkles.
Let frosting set fully before serving for the full Pop-Tart experience!
